Ok I'm going to apologize to my mother in law right up front I'm sorry Jeanne.  This article will reveal a cooking method that she certainly wouldn't consider cooked.  I've become the type of guy that folks generally don't ask...they just taste.  Coming up will be a delectable shrimp ceviche recipe...with a wimp clause.

I was still very young when my father's mother passed.  She was a brilliant chef.  I remember I was about ten when I experienced my first ten-boy curry.

It's hot...too hot to cook...or at least I have to keep it to a minimum.  Southern California only really has a couple of rough seasons...and at least to me September is the worst.  When it's hot like that big beautiful cold shrimp or prawns are a treat, and whether you make a Louie, a Mexican Cocktail, or just eat them straight it all starts the same with a good old fashioned shrimp boil.

I was grilling two kinds of shrimp in a parking lot where Jimmy Buffett was about to play.  We had goofy hats, grass skirts, coconuts, squirt guns, and al the accouterments suitable for a tropical daydream.

Good cheese is a treat, not an ooh that would be nice kind of thing, but rather, a this old man just became an eight year old kid and instead of fancy cheese that's a big sac of candy cause it's Halloween, kind of thing.  Yeah it's like that.  Today let's talk about Humbolt Fog from Cypress Grove, a California treasure.

So my wife and I used to go to a cheese shop located somewhere in Southern California.  The location will be kept secret to protect the innocent.  The cheese was divine.  The service lacking in ...what's the word...oh yeah...basic human decency.

I woke today, and made my pilgrimage to the shiny black and silver machine in my kitchen as I do every morning.  I made an americano...my usual.  As I sip I have to say coffee has changed.  I've had a special relationship with coffee for quite some time.  I worked at Starbucks when You've Got Mail was in the theaters, and I met the woman who I've carried on a romance with since back then.

There are a few things that I love in this world that are very different from when I was a kid.  I don't know if grilled corn is a Southern California thing or if I just never experienced it until I got here.  I'm inclined to think that corn...that grilled corn is an American thing.  It feels to me like a piece of summer memory that we all share.

There really is nothing like a nice piece of fish on a hot summer night.  Here is a simple recipe that produces impressive results.  Also it does one of my favorite things.  It allows you to front load the work and spent time with your guests.
In many ways this fish is the extension of a memory.  My brothers and I, boyscouts all, brought impressive meals to life from a little hobo meal wrapped neatly in foil.

Let's talk about NAMP 184F.  Yeah I just got all beef nerd on you.  I have most commonly seen this steak called a baseball cut...but it's being sold under a number of names.  So first off, what is it and when do you want to buy it?

Saint Angel...an aptly named Cheese.  First off this is Brie, and what a Brie.  Sometimes you want a cheese that slaps you in the face.  This is not that cheese.  This is a first date kind of cheese.  This is the type of cheese that helps you pretend to be better than you are.  This cheese did its homework got into a good college, and when there didn't do those things you did...you know that time at that party.  Saint Angel has hints of cream and butter.  It is smooth, light, and its delicate flavor is easily overpowered.  Hailing from the south of France she is pure and straight forward.  This cheese will please the rookie and the pro alike.  Keep the wine pairing light...Albarino...Champagne...Pinot Noir...Pilsner.

The secret to soup is stock.  It's the easiest thing in the world.  So here I'm doing a lemon chicken stock. What's in the pot?  Chicken Bones, carrots, onions, celery, herbs, and lemons.  I'll boil this for a few hours.  Then I'll strain out the solids, add a few tasty things like pasta and onions.  The leftover chicken will go in right before I serve.  For a more traditional flavor profile, leave out the lemons.  Stock or broth does not come in a box, can, cube, or packet of flavor.  This simple trick will change any recipe that calls for stock...and make you look like what you are a rock star chef.
